Google Maps Tilt and Zoom

Hi folks.
Some time ago I was giving v. 4.5.3 Pro a try and set some modifications to the HTML template (normal.ggt) to customize the Google Maps behaviour.
1) I set zoom:19 under mapOptions and removed the line if (!bounds.isEmpty())... to get the desired starting zoom level.
2) I added map.setTilt(0) to the map definition (map = new google.maps.Map...) to avoid that 3D effect.
Great. It worked fine.
Now I'm trying v. 5 and wondering how to achieve those same effects... since the map definition has been removed from the HTML code of the template.
How can I do?
